Sunday Brunch
On Sunday I woke up and thought to myself- 'it's cold out, I need to clean out the fridge....why not have a brunch!'
The best part of relying on recipes that are strickly vegan is that you almost ALWAYS have the right stuff to make a delicious snack.
The best tip I can give you is- NEVER throw out food (unless of course, it's rancid!). If things are going a bit wilted in your fridge dig out your old cookbooks, or google a recipe with that key ingredient. You'll be surprised at the quick, easy and resourceful things you can find. If you already have too much stuff to eat- freeze it! I love being hungry and not wanting to cook and digging through my freezer to find some delicious meals!
Another great thing people forget about is outside storage! This time of year you can store a lot of food outside on your deck! Right now I have two massive pots of soup just chillin on a deck chair!
With a quick easy look through my books I manage to make several things-
Curried squash and sweet potato soup
Sauteed spinach with tomatoes and almonds
Napa style baked beans
Purple veggie soup.
While it's not a traditional brunch, it was enough to give us a healthy selection of variety!
