What professions to learn

I didnt get a chance to play much last night, as I got home late from teaching, and my brain couldnt handle all the running around I needed to do to complete a couple of quests.

While aimlessly running around trying to find the NPC I needed to drop the quest off to, I picked up mining. Mining! for a priest, well from past experience with my mining Pallie, I know I can make a ton of money, but do I want to spend the time mining, and being a squishy priest, burn through all my mana drinks to defend myself while I mine.

I could go the herbalism and alcy route, or herbalism and tailor route. Many people suggest two gathering profs until I get to a higher level, herbalism is pretty harmless and I can gather without being bothered too much.
